INGREDIENTS:
• 6 shelled king prawns.
• 2 cloves thinly sliced garlic.
• 1 birds eye chili, spilt down the middle.
• 100ml extra virgin olive oil.
• salt & pepper to taste.
• chopped parsley.
• 1 terracotta dish [If terracotta dish is not available use regular pan.]
INSTRUCTIONS:
-Heat the terracotta dish with the olive oil and a chili until just before the smoking point.
-Carefully add the garlic and the prawns then season the dish with salt and pepper.
-Add more chili and cook for a minute before turning over shrimps. Add the parsley.
-Cover the terracotta dish with a plate or tray and remove from the heat.
-After 1 minute rest, serve with nice crusty bread.
