FARMERS BREAKFAST PIE
• 1, 9″ pie shell.
• 8 slices of bacon, cooked and crumbled.
• 1 1/2 Cup shredded cheddar cheese.
• 4 large eggs.
• 1 Cup half and half.
• 1/3 Cup diced red bell pepper [you could use green or a combination.]
• 2 green onions, chopped.
• 1/8 Teaspoon ground yellow mustard.
• 1/4 Teaspoon pepper.
• good pinch of salt.
-Place the pie shell in a 350°degree oven and partially bake for 12mins.
-Remove and spread the crumbled bacon in the bottom of the pie.
-Top the bacon with the cheese, set aside.
-In a bowl whisk together the eggs and half and half, add all remaining ingredients and mix well.
-Pour over the cheese and return to the oven for 45mins or until the center is set.
-Remove and let rest for 5mins before slicing.
*Note: If the edges of the crust begin to get to brown, cover them with a little tinfoil.
