CHOCOLATE CHIP CLOUD COOKIES
4 Large eggs, separated to whites
⅛ Tsp. cream of tartar
½ C. sugar
1 Tsp. vanilla extract
2 Tsp. unsweetened cocoa powder
1 C. mini chocolate chips
HOW TO MAKE:
1-Heat oven to 300°F.
2-Cover baking sheet with parchment paper or silicone baking mat.
3-Beat egg whites and cream of tartar until soft peaks form.
4-Slowly add sugar, followed by vanilla and continue to beat until stiff peaks form.
5-Sugar should be dissolved and egg whites glossy in appearance.
6-Sift cocoa powder into egg whites and fold gently until combined.
7-Fold in chocolate chips, then drop even-sized heaping scoops onto cookie sheet.
8-Bake 35-40 minutes or until cookies are just dry.
9-Cool slightly before removing from cookie sheet.
10-Transfer to wire rack to finish cooling. Store at room temperature in an airtight container.
