• 1 Pound ground breakfast sausage.
• 1 Tablespoon butter.
• 5 large eggs.
• 1 Cup shredded colby jack cheese.
• 6 flour tortillas.
-Brown the sausage in a skillet over med. high heat.
-Drain the grease and add the butter to the pan. -Lower the heat to medium and crack the eggs into the sausage and sprinkle in the cheese.
-Stir the mixture until the cheese has melted and the eggs are soft scrambled.
-Place the tortillas between two damp paper towels and microwave for 30seconds.
-Divide the sausage mixture between the tortillas and roll up.
-Wrap individually in plastic wrap and place in a ziploc freezer bag.
-Freeze up to 3 months. To warm, microwave for 1 to 2minutes.
