Tex-Mex Ranch Potatoes
TEX-MEX RANCH POTATOES
2 Pounds Dynamic Duo Little Potatoes
1 Packet taco seasoning
1/2 C. prepared ranch dressing
2 C. shredded cheddar cheese divided use
1/2 Pound bacon cooked and crumbled
3 Green onions sliced

HOW TO MAKE:
1-Preheat oven to 350f degrees.
2-In a large bowl, combine ranch dressing, taco seasoning and half the shredded cheddar cheese. Set aside.
3-Cut Little Potatoes in half (or quarter them if they are a bit larger.)
4-Add potatoes to bowl with ranch/taco seasoning an stir well until all the potatoes are coated.
5-Spread potatoes into a 2-quart baking dish (or an 8×8 square baking dish.)
6-Cover with aluminum foil
7-Bake for 45 minutes.
8-Remove foil and stir potatoes well. Return to the oven (uncovered) for another 15 minutes.
9-Remove potatoes and sprinkle with the rest of the shredded cheddar cheese and bacon.
10-The heat from the potatoes should melt the cheese.
11- Or you can stick it under the broiler for a few seconds to melt quickly.
