FRIED POTATO, SALMON PATTIES

INGREDIENTS:

• 1 Cup leftover, seasoned mashed potatoes.
• 5 ounce can skinless, boneless salmon, drained.
• 1 large egg.
• 2 green onions, chopped.
• 1/4 Cup+1 Tablespoon all purpose flour.
• 1/4 Teaspoon smoked paprika.
• 1/4 Teaspoon garlic powder.
• 1/4 Cup shredded colby jack cheese.
• vegetable oil for frying.

INSTRUCTIONS:

– Combine all the ingredients in a bowl.
– Heat about 1/4″ of oil in a skillet.
– Drop the mixture by spoonfuls and slightly flatten out.
– Cook till golden brown on both sides, about 2-3 minutes per side.
– Drain on a paper sack or paper towel lined plate. Approx. 14-16 patties.
