Easy Kolacky – Christmas Recipe
EASY KOLACKY – CHRISTMAS RECIPE
YOU’LL NEED:
1 (8 Oz. ) package cream ceese, softened
1 C. butter
1/2 C. confectioners’ sugar
2 C. all-purpose flour
1 (12.5 Oz. ) can apricot fruit filling (such as Solo(R))
1/4 C. confectioners’ sugar for dusting
HOW TO MAKE:
1-Place the cream cheese and butter in a large bowl; beat with electric mixer until smooth and creamy.
2-Beat 1/2 cup of confectioners’ sugar into the butter mixture.
3-Slowly beat in the flour; mix well.
4-Cover bowl and refrigerate at least 3 hours, or overnight.
5-Preheat an oven to 375 degrees F (190 degrees C).
6-On a well floured board, roll out chilled dough to 1/8 inch.
7-Use a pizza wheel to cut dough into 2 1/2 inch squares.
8-Spoon approximately 2 teaspoons of filling in the center of each square; do not overfill.
9-Fold opposite corners of each square into the middle to encase dough, pinching dough together in center.
10-Filling should peek out a little at each end.
11-Transfer cookies to an ungreased baking sheet.
12-Bake the kolacky in the preheated oven until set but not brown, about 12 minutes.
13-Remove to racks to cool.
14-Dust cooled kolacky with remaining powdered sugar.
