CATHY’S BANANA BREAD

Soured cream makes this bread really moist and balances out the sweetness from the ripe bananas.

YOU’LL NEED:

225G mashed bananas
225G soured cream
55G butter
260G caster sugar
2 Eggs
1 Tsp. vanilla extract
250G plain flour
1 Tsp. bicarbonate of soda
1 Tsp. baking powder
1/4 Tsp. salt

HOW TO MAKE:

1-Preheat oven to 180 C / Gas 4.
2-Grease and flour a large loaf tin, or two small loaf tins.
3-Combine banana and soured cream in a bowl; set aside. In a large bowl, cream together the margarine and sugar until smooth.
4-Beat in the eggs one at a time, then stir in the vanilla and banana mixture.
5-Combine the flour, bicarbonate of soda, baking powder and salt; stir into the banana mixture.
6-Spread the mixture evenly into the prepared tin.
7-Bake for 50 minutes in the preheated oven, or until a skewer inserted into the centre of the loaf comes out
