Pan-Fried Cod

PAN-FRIED COD

YOU’LL NEED:

11/ lb cod fillets
1/4 C. flour
1 Egg, beaten
1 C. panko bread crumbs
1/4 C. canola oil
Salt and pepper to taste
Lemon, optional

HOW TO MAKE:

1-Preheat large sauté pan on medium.
2-Dip fish in flour (coating both sides), then dip into egg mixture (allowing excess to drip off), and coat with panko.
3-Place oil in pan, then add fish; cook 4-5 minutes on each side or until crust is golden and flesh is flaky.
4-Drain on paper towel and season with salt and pepper.
5-Serve with lemon, if desired.

Other Preparation Methods

6-Sauté: Preheat large sauté pan on medium.
7-Place 2 tablespoons garlic herb butter in pan, then
add fish; cook 2-3 minutes on each side or until opaque and
separates easily.
8-Squeeze lemon juice over fish.
9-Bake: Preheat oven to 400°F. Place 1 1/2 lb cod in foil pouch with 1 tablespoon butter, 1/4 teaspoon salt, 1 tablespoon chopped parsley, and 1/2 cup diced tomatoes.
10-Bake 8-10 minutes or until opaque and separates easily
