Mediterranean Lemon Chicken
MEDITERRANEAN LEMON CHICKEN

1/4 C. flour
1 Tbsp. McCormick® Perfect Pinch® Mediterranean herb seasoning
1 Pound thinly sliced boneless skinless chicken breast, halves
2 Tbsp. oil
1 C. chicken broth
1 Tbsp. lemon juice
1 Tbsp. fresh chopped parsley
HOW TO MAKE:
1-Mix flour and seasoning in shallow dish. Reserve 1 tablespoon.
2-Moisten chicken lightly with water. Coat evenly with remaining flour mixture.
3-Heat oil in large nonstick skillet on medium heat.
4-Cook 1/2 of the chicken pieces 3 to 4 minutes per side or until golden brown. 5-Repeat with remaining chicken, adding additional oil if necessary.
6-Remove chicken from skillet.
7-Mix broth, lemon juice and reserved flour mixture in medium bowl until well blended. Add to skillet.
8-Bring to boil, stirring to release browned bits in bottom of skillet.
9-Stirring frequently, cook 5 to 7 minutes or until sauce is slightly thickened. 10-Return chicken to skillet; cook until heated through.
11-Sprinkle with chopped parsley. Serve with cooked pasta or rice, if desired.
