CAKE IN AN ELECTRIC SKILLET

INGREDIENTS:

• 1 box cake mix.

• tinfoil.

• 1 small roasting rack {I used one that came with my toaster oven cooking set.}.

• cooking spray.

INSTRUCTIONS:

-Place a sheet of tinfoil in the bottom of your electric skillet and then put the small roasting rack on top.
-Turn it on to 375°degrees and put the lid on. Meanwhile, beat together your cake mix using the directions on the box.
-Spray a 9 x 9 x 2 baking pan with cooking spray.
-Pour in the batter to fill the pan just over halfway full.
-There will be a little batter left which I put in a cup and fried up with our pancakes this morning.
-Put the baking pan on the rack inside the electric skillet and cover.
-Cook for 1hour then crank the heat up to 400°degrees and cook for 1 more hour.
-The cake will pull away from the side of the pan and spring back when touched.
-It will seem moist on top.you can see where I touched it, remove the lid and let it cool a bit in the skillet, and that moisture will evaporate.
