Apple and Cream Cheese Cobbler

• 3 medium apples, peeled and chopped.
• 7 Tablespoons butter.
• 1 Tablespoon cornstarch.
• 1/3 Cup packed brown sugar.
• 1/4 Cup water.
• 4 Ounces cream cheese, room temp.
• 1/4 Cup powdered sugar.
• 1 Teaspoon vanilla.
• 1/2 Cup self rising flour.
• 1/2 Cup sugar.
• 1/2 Cup milk.


-Melt 3 Tablespoons butter in a medium pot over medium high heat.
-Toss the apples with the cornstarch then add the apples to the pot along with the brown sugar and water.
-Bring up to a boil, reduce to medium and cook, stirring often, for 10mins.
-Remove from heat and let cool slightly.
-In a bowl, combine the cream cheese, powdered sugar and vanilla, set aside.
-Place the remaining 4 Tablespoons butter in a 8 x 8 baking dish and place in the oven to melt as it preheats to 350°degrees.
-Meanwhile, whisk together the last 3ingredients, set aside.
-Once the oven is preheated and butter melted, remove the dish and pour the batter into the dish, do not stir, then place dollops of the cream cheese over the batter then top that with the apple filling.
-Do not stir any of this together. Place the dish back in the oven and bake for 35 to 40 mins until nice and golden on top.
-Allow to cool slightly before serving.
