VEGGIE CRUSTED SALMON
This Baked Salmon dish is easy to prepare and very satisfying
PREP TIME: 10 mins | COOK TIME: 10-15 mins | TOTAL TIME: 30 mins.
• 4 Salmon Fillets.
• 1 Tablespoon Sesame Oil [can use olive oil.]
• Salt & Fresh Black Pepper, to taste.
• 1 Carrot, grated.
• 1 Jalapeno, grated.
• 1 half Onion, grated.
• 1 half Bell Pepper, grated.
• 1 Teaspoon garlic, minced.
• 1 half lime, zested.
• 1 half lemon, zested.
1-Preheat oven to 400° degrees / try on the grill too!
2-Mix ingredients # 4 – 10 in a mixing bowl.
3-Rub Fish with Oil and season with Salt & Pepper.
4-Coat Fish with mixture and place each in parchment paper, making a pouch by folding seams to close and place the  pouches on baking sheet.
5-Bake fish for 10 to 15minutes, or until desired doneness is achieved.
6-Use the half lemon or lime to squeeze on top.
