Cake mix italian cream cake

CAKE MIX ITALIAN CREAM CAKE

YOU’LL NEED:

CAKE
1 (18 1/4 Oz.) white cake mix
1 (3 1/2 Oz.) packages instant vanilla pudding
1 1/2 C. water
4 Eggs
1/2 C. canola oil
1 C. chopped pecans or 1 cup walnuts, etc
2 C. flaked coconut
FROSTING
3 Tbsp. butter, softened
6 Oz. cream cheese, softened
1 -2 Tbsp. cream
2 1/2 C. confectioners’ sugar
1 1/2 C. flaked coconut

HOW TO MAKE:

1-Preheat oven to 350 degrees F (175 degrees C). Grease three 9 inch round cake pans. In a small bowl, dissolve the baking soda in the buttermilk; set aside.
2-In a large bowl, cream together 1/2 cup butter, shortening and white sugar until light and fluffy. Mix in the eggs, buttermilk mixture, 1 teaspoon vanilla, 1 cup coconut, baking powder and flour.
3-Stir until just combined.
4-Pour batter into the prepared pans.
5-Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6-Allow to cool.
To Make Frosting:
7-In a medium bowl, combine cream cheese, 1/2 cup butter, 1 teaspoon vanilla and confectioners’ sugar.
8-Beat until light and fluffy.
9-Mix in a small amount of cream to attain the desired consistency. Stir in chopped nuts and remaining flaked coconut.
10-Spread between layers and on top and sides of cooled cake.
