Apple Cinnamon Scones


APPLE CINNAMON SCONES

A long time ago, I use to think scones were just dry and bland. It wasn’t until I learned how to make my own scones that I realized they’re quite the opposite. Scones should be soft, tender, flaky, and leave you going back for seconds or even thirds.

“What are you making? It smells like a spring day…” That was the reaction the first time we baked these moist, flavorful scones. Fresh diced apple and cinnamon chips complement each other beautifully, flavor-wise; and a topping of crunchy, cinnamon-enhanced coarse sugar is the perfect foil to the scones’ tender texture.

One great thing about this recipe is that all of your ingredients need to be cold. There’s no need to wait for your butter or other ingredients to come to room temperature. You can just grab everything you need, mix up the dough, pop it into the oven, and be enjoying these scones in no time!

Quick Tip: To get a good rise in your scones, you need enough baking powder to make them nice and tall.

YOU’LL NEED:

»1 Large egg.

»1/4 Cup unsweetened apple sauce.

»1 Teaspoons lemon juice.

»1 Tablespoon sugar.

»1 Medium apple.

»2 Cups all-purpose flour,(plus a small amount for dusting).

»1/2 Teaspoon salt.

»2 Teaspoons baking powder.

»1 Teaspoon cinnamon.

»1/2 Teaspoon ground ginger.

»5 Tablespoons cold butter.

»CINNAMON GLAZE (optional):

»1/2 Cup powdered sugar.

»1/2 Teaspoon cinnamon.

»2 Teaspoons water.

HOW TO MAKE:

1-Preheat the oven to 400ºF.. .Wash the apple, cut it into quarters, then cut off the core from each piece. Use a box grater or large holed cheese grater to shred the apple.

2-In a medium bowl, whisk together the egg ,apple sauce, lemon juice, sugar, and shredded apple.

3-In a separate large bowl, stir together the flour, salt, baking powder, cinnamon ,and ginger. Once combined, add the butter and work it into the flour until it resembles coarse, damp sand.

4-Finally, pour the bowl containing the apple egg mixture into the large bowl with the flour and butter. Stir just until a dough forms and no more dry flour remains on the bottom of the bowl.

5-Turn the dough out onto a lightly floured surface and shape into a 6-8-inches wide, 1.5-inches thick disc,[sprinkle more flour on your hands and on the surface of the dough if needed. The dough may be slightly sticky]. Cut the disc into eight wedges.

6-Line a baking sheet with parchment paper and place the cut scones on top. Bake the scones for 18 to 20 mins in the fully preheated oven, or until they are just slightly golden brown on top. Allow the scones to cool completely.

7-To make the glaze, stir together the powdered sugar, cinnamon, and water until a thick paste forms. Once the scones are fully cooled, drizzle the glaze over top.
