Peach Batter Cake
PEACH BATTER CAKE
YOU’LL NEED:
4 C. sliced peaches, fresh (peeled) or canned (drained)
1 Tbsp. lemon juice
¾ C. sugar
3 Tbsp. butter, softened
½ C. milk
1 C. all-purpose flour
1 Tsp. baking powder
¼ Tsp. salt
Topping:
½ C. sugar
½ Tbsp. cornstarch
¼ Tsp. salt
½ C. boiling water
HOW TO MAKE:
1-Grease a deep 8 x 8-inch baking dish and line bottom with peaches.
2-Sprinkle peaches with lemon juice.
3-Cream sugar and butter; add milk and dry ingredients alternately.
4-Spread batter over peaches.
5-For topping, combine sugar, cornstarch and salt; sprinkle over batter.
6-Pour boiling water over cake.
7-Bake at 375 degrees F for 1 hour.
